Planning for Kyle's Future

Kyle, my Italian basil plant (challenge no. 24), continues to bask in the sun on the windowsill of my "dining room," also known as "that corner in our apartment where we managed to squeeze a bistro table." While I nurse him into adulthood, I've been planning for his future a la some pretty fantastic looking basil recipes:

Of course, a pesto is a good way to go. I found this recipe for raw vegan pesto and plan to toss it with some zucchini noodles or kelp noodles and top it with some Rawmesan cheese. Yes, that is a thing. It's actually incredibly delicious. Or perhaps, if I'm feeling ambitious, I can attempt to make raw vegan lasagna.






Soups are also in Kyle's future. They are incredibly easy to prepare and will make some great lunches for challenge no. 20. I love corn soups, and corn and basil make a wonderful pair. I plan on turning this recipe for cream corn with basil into a soup by putting all the ingredients in a blender and adding a little almond milk.



Feel free to share your favorite recipes involving basil. They don't have to be raw vegan. I do live with a 6'4" carnivore.

  1. You can never go wrong with a steak sandwich - rare-medium rare steak, sliced very thin, on a crusty Italian roll, fresh mozzerella, and Kyle. Top with some fresh cracked pepper and sea salt, and the juices from slicing the steak. (You're welcome, Austin!)
